Lamb eggs, along with bull and hog testes, are classified as delicacies. On the basis of lamb eggs in Arab countries, a delicious pilaf is prepared, which is decorated with this product - they are placed in the most prominent place and offered to the most honorary guests.

When fresh, lamb eggs are much larger in volume than after heat treatment - in other words, after boiling and frying, they are largely reduced in size. Quality lamb eggs are distinguished by a pink color with veins of lilac shade. If you are offered a sub-product, which is characterized by a purely gray or greenish color and, moreover, lamb eggs are not elastic to the touch - refuse in favor of a fresher option, since these have already begun to decompose, although an unpleasant smell does not come from them.

To prepare lamb eggs, first of all, you need to save them from a rather strong shell - this can be easily done with a sharp knife. After a shallow incision, you need to manually turn the lamb eggs inside out and carefully separate the central core from the skin.

Basically, after the shell is removed, the core of the lamb egg is cut into several shares of the same size and the pieces are thoroughly washed. At the very beginning of cooking, lamb eggs are recommended to boil within five minutes after boiling, and tip the boiled slices into a colander, rinsing with boiled water.

Lamb eggs, like pork or bull eggs, are prepared according to recipes similar to the preparation of animal kidneys. By the way, to taste lamb eggs remotely resemble pork buds, however, the first sub-product is much more delicate and has a more subtle taste. In addition, lamb eggs absolutely do not need to be soaked, which is required by the kidneys.

It is recommended to cook lamb eggs with the addition of black pepper, spicy herbs, coriander and other spices to taste. As a rule, when frying lamb eggs, it is customary to add white sauce, crushed onions, bulb and dry wine.

Benefits of lamb eggs

As you know, many are sure that the benefits of lamb eggs (like the testes of other animals) for human health (in particular, for males) are the high content of hormones that are responsible for potency. However, this is not entirely true, although in this assumption there is a rational grain: in order to obtain these hormones, it is necessary to consume raw lamb eggs, due to the fact that during heat treatment they are completely destroyed.

Nevertheless, there is no denying the benefit of lamb eggs as an excellent source of animal protein that is easily digested in the human body. In other words, lamb eggs are both nutritious and beneficial products. By the way, the calorie content of lamb eggs per 100 grams of meat is approximately 230 kcal.
