Kulebyaks are a type of closed pies that are distinguished by the complex composition of the filling. Kulebyaki pies belong to Russian national dishes. The result is a pie filled with individual layers of cabbage, buckwheat porridge, eggs, fish, onions, mushrooms, as well as screeching. It is noteworthy that kulebyaki pies gained worldwide fame and popularity thanks to French chefs and culinary workers who lived and worked on Russian soil since the 19th century.

However, the sophisticated French made some adjustments to the recipe of the Russian folk dish. In order to adapt kulebyaki pies to the taste preferences of the discerning French public, the composition of the product was slightly changed. New species of kulebyak filled with game, salmon, champignons and rice quickly fell to the taste of Europeans. Over time, many types of kulebyak migrated from Russian national cuisine to European culinary traditions.

Any kind of kulebyak will differ from other pies in its complex filling. In addition, the filling in kulebyaks occupies more than half the weight of the final bakery product. It is also worth noting that the types of kulebyak differ in the way the filling is placed in pies (in layers or "corners").
