Pampushkas...

A pampushka is a small-sized bun that tends to be made from yeast dough. This bakery product belongs to the national Ukrainian cuisine. However, pampushki under different names have long been firmly established in many culinary traditions of the countries of the world. The beauty of pampushek lies in the compact size of the buns, which can be compared to a walnut or small apple.

Pampushki are classified as a variety of crumpets. However, the main difference between pampushka and crumpets can be considered the method of making bakery products. Unlike crumpets or doughnuts, pampuchka is not fried, but baked in an oven or oven. Garlic buns are considered the most common and widely used type of pampushek in cooking.

Pampushki with garlic are perfect with soups. In the Ukrainian national culinary tradition, pampushki with garlic are served as an important addition to real borscht. In addition to garlic pampushek, the so-called pampushki-pesas are in demand, which are distinguished by their correct round shape. Pampushki became an integral part of the Russian national culinary tradition in the second half of the 19th century, when Odessa restaurateurs began to use the bakery product.

Pampushki quickly fell to the taste of the sophisticated Odessa public and gradually from the village bakery passed into the category of writing to the urban population. For baking pampushek, yeast dough is used, which is made from chicken eggs, cow's milk, as well as butter. For pampushek, it is better to knead uncool dough.

In addition, the dough must rise twice to end up with tasty and airy pampushki. Yeast dough is divided into equal pieces small in size, then dipped in oil, allowed to rise a little, and then steamed in special molds. Almost ready-made pampushki are baked in the oven until a characteristic golden hue is obtained.

As previously noted, pampushki are considered an indispensable attribute of Ukrainian borscht. In addition, pampushki are served to gravy. The calorie content of the pampouches depends on the initial composition of the ingredients to be used in the preparation of the bakery product. Researchers believe that the recipe for pampushek was invented by Germans who once settled in Odessa. As they assure, historians the word pampushka came from the German pfannkuchen or "fritters. " There is another version of the origin of the name pampushek. It is believed that the word pampushka was borrowed from their French language, where the word pompon denotes a ball. Be that as it may, the German recipe and French name did not prevent pampushkas from becoming an integral part of the Slavic culinary tradition.
