Premium quality wheat flour is ideally white, although sometimes a light cream shade is allowed. Thanks to the low percentage of gluten, this flour produces very lush and airy biscuits and muffins, but there is practically no benefit for the human body from it - the ash content of prime grade wheat flour is no more than 0. 50 percent. Confectionery and bakery products, as well as a variety of cakes, are good from this flour, but first-grade wheat flour is suitable for kulebyak and pies.

Wheat flour of this variety is most used in the manufacture of high-quality flour products, since, having excellent baking properties, ready-made pastries from it are characterized by fine porosity and good volume. Such flour is remarkably suitable for puff, sand and yeast dough, as well as for making sauces and flour dressings.
