As is known, the composition of beans and lentil flour contains almost no fat with a mass fraction of proteins of about 35% and carbohydrates of 70%. In addition, lentil flour is rich in macro- and microelements, as well as vitamins.

The use of lentil flour is characteristic of the baking industry, where it is added to the composition of dough intended for making cookies and biscuits, that is, long-term storage products. Thus, it is customary to add it to wheat flour in an amount of up to 20%, due to which the protein content in bread increases by 3%.

In addition, lentil flour is often used in the gastronomic and confectionery industry, adding it to cocoa, coffee, sweets, chocolate and even some types of sausage products. In home cooking, lentil flour can be used in the preparation of homemade bread and fritters.

Lentil flour is incredibly useful for human health, because in addition to the vitamin-mineral complex, it contains essential amino acids and a lot of iron. And dishes made from lentil flour embody all its benefits. For example, lentil flour meals and legumes themselves are the main source of protein for vegetarians. And in general, the use of this product contributes to strengthening immunity and the cardiovascular system, normalizing metabolism, lowering blood glucose levels.

It has been proven that lentil flour contains substances unique in their properties - isoflavones that can suppress the development of breast cancer. These substances do not lose activity even after different types of treatment, therefore, by purchasing not only lentils themselves, but also canned and dried products, their benefits of lentils do not decrease.

It should be noted that lentils and lentil flour are also environmentally friendly products. This is due to the fact that this culture does not accumulate toxic elements harmful to humans (radionuclides, nitrates and many others).
