Walnut jam can be safely called a delicatessen product, which is highly appreciated both by "legible" foodies in the Caucasus, where it is very popular due to the abundant growth of these trees, and far beyond this region.

In general, nut jam is usually called a canned product made on the basis of green nuts that have reached exclusively the stage of milk ripening. This wonderful treat is rightfully called the "king of jam, " because it is not only unusually tasty, but also quite useful. The color scheme of the finished walnut jam can vary from dark yellow to rich brown, sometimes with shades of purple.

For the preparation of real walnut jam, exclusively green walnuts are used, which are distinguished by the presence of still soft shells and jelly-like kernels. According to the established GOST R 53118-2008 only whole fruits can be used in jam, but without the top layer of peel. So, in the composition of industrial walnut jam, in addition to the green walnuts themselves, there is prepared water, sugar, cloves and citric acid.

In fact, the production of such nut jam is a lengthy and complex process, due to the bitterness in the raw materials and, accordingly, their prolonged processing. So, immature nuts are cleaned from the upper crust of green covering them and soaked in cold water for two days with a constant change of water. After that, the liquid is replaced by specially prepared lime water.

After a day in lime water, green nuts are washed, pierced in several places and soaked again for two days in cold water. Only on the sixth day since the beginning of cooking jam, walnuts sink into boiling water, boil for about ten minutes and recline on a sieve.

At the last stage of making walnut jam, the prepared raw materials are boiled several times in sugar syrup, spiced and packed into sterile glass jars. The calorie content of walnut jam is about 248 kcal, which is per 100 grams of sweet product.
