Shaker churek

Shaker churek...

The mysterious phrase shaker churek clearly hints that it takes its roots from the East, but in general it means a special type of cookie. Shaker churek is actually a vivid representative of the so-called oriental sweets. By the way, in Russian, by oriental sweets it is customary to understand the generalized name of various confectionery products that are characteristic of Central Asian, Transcaucasian and Arab cuisines. There are about 170 species of them.

In other words, this type of confectionery is called oriental sweets, due to their territorial distribution - countries of the Middle and Middle East. They are mainly made in the form of montpensier and caramel (kozinaki, grillage), flour products (kitty, shaker, baklava) and sweets (halva, onion, nougat).

Shaker churek is a national cookie that is tender and crumbly - these qualities are due to the compositions of this product. Interestingly, in the literal translation from Azerbaijani, Shaker Churek means sweet bun (bread). With a cup of fragrant freshly brewed coffee or tea, these excellent sunny biscuits, even despite their considerable nutritional value, are just the perfect start to the day.

Shaker churek is distinguished by its round shape, crunchy golden crust and delicate flesh. It is prepared on the basis of wheat flour, special Ghi melted butter, sugar and eggs. For a Russian person, all the ingredients of shaker churek are familiar and understandable, but Ghi is a product, for sure, unknown.

In essence, Ghi is nothing more than spiced-flavored ghee, which is obtained from cow's milk in South Asia. Sometimes in cow's milk there may be impurities of buffalo milk. It is worth noting that Ghi melted butter is not only an integral component of churek shaker, but also one of the characteristic and most popular food products in India.

Traditionally made Ghi ghee is characterized by a light nutty aroma and flavour, and the home product is stored for much longer than what was produced industrially. Indians argue that for medical purposes, ghee is the more healing the longer it matures.

All the characteristic properties of this product are transmitted by the shaker churek liver, but if you do not have a chance to get Ghi, make this treat based on ordinary butter. To do this, dissolve the yeast egg protein, add melted oil to them and stir slightly. After introducing the sugar and vanilla, vigorously whisk the dough for about 20 minutes, adding the flour at the end. Rolling the balls out of the dough, give them a coaster shape with pointed tops, lay the cookies on a sheet, brush the coaster ends with yolk and bake until ruddy. The finished shaker churek can be sprinkled with icing sugar.
