Before touching on the topic of such an excellent oriental delicacy as a shaker bura, one cannot but turn to the origins of its emergence, traditions and customs of the country where these cookies appeared.

Nowruz. . . In translation, this word means a new day, but in general, it is a holiday of spring, which implies the renewal of nature, celebrated by people on March 21 - on the day of the vernal equinox. This day has been important in Azerbaijan since ancient times, and its roots go back far into the era of Zoroastrianism.

Preparing for this day, scrupulous hostesses begin to bake sweets traditional for this country, prepare the house for the holiday, and also germinate wheat seeds. By the way, a month before Novruz, it is customary to celebrate four festive Tuesdays, each of which is a kind of symbol of one of the 4 elements - fire, water, earth and wind.

These days, there is necessarily a honcha on the table, which is decorated with sweets, nuts, painted eggs and candles. Children run from house to house, putting hats under the door so that the owners fill them with goodies. And young girls are sure to guess and exchange baked goods, trying to determine whose best they managed.

By the way, as a rule, many sweets are prepared on this holiday, but the main ones are the shore gogal, baklava and, undoubtedly, shaker bura. At the same time, baklava is a symbol of the four directions of the world, the shore of gogal is the sun, and the shaker-bura is the moon.

It is about such an interesting product as a shaker drill, and I would like to talk. Shaker Bura is an Iranian confectionery which is very common in Azerbaijan today. This pastry is a hemispherical egg-shaped cookie consisting of a waffle shell (like a month), inside which there is a rather dry nut-sugar filling.

The classic recipe for making shaker bura cookies involves the use of products such as wheat flour, pressed yeast, sour cream, eggs, melted butter, salt and water. These ingredients are essential for making dough, which in its structure after baking really resembles homemade delicate and at the same time crumbly waffles.

Only two components are used for filling shaker bura cookies - granulated sugar and nuts. Basically, hazelnuts are used for this purpose, although other options are quite acceptable - almonds, walnuts and even peanuts. In addition, fragrant spices, in the role of which, as a rule, can be used in the filling for shaker drill. Ground cardamom is added, giving the finished product an extraordinary smell.
