However, I would like to pay a little attention to a special Turkish delicacy - writing, which is inherent not only in a beautiful story of origin, but also in a less attractive taste.

According to legend, a fairly famous confectioner lived in the Turkish city of Izmit in ancient times, whose sweets were popular throughout the city. He was in love with a girl who did not differ in harmony, but despite this, the man in love did not pay attention to anyone else. It was in her honor that he named his new sweetness - Shishmania. By the way, from the Turkish language, Shishman can be translated as "fat girl. "

What the cook wanted so much came true - a wedding took place, but his marriage was short-lived: the young wife turned out to be a very jealous and picky woman, so the marriage did not last long. After the divorce, the sweetness, which the pastry chef called Shishmania, was renamed Pishmania by the people, which means a writer who repented of the word.

Today, many types of writing are known, but all of them have a common composition of the products used, the number of which can vary. So, writing is prepared on the basis of sugar, water, citric acid, oil and wheat flour, however, to prepare this treat, you need to master special skill. And in fact, the process of manufacturing writing is considered difficult and very time-consuming.

First of all, a mixture of water, citric acid and sugar is prepared, which is boiled in cauldrons. At this time, flour is fried in oil with constant stirring. The result of this painstaking work is the moment when five craftsmen simultaneously and manually try to combine the sugar mixture with fried flour, while achieving complete mixing of these blanks.

Interestingly, the resulting mixture is rolled up in the form of an eight, stretching in different directions so that the thinnest threads are obtained. To date, the production of writing is not accompanied by gatherings of young girls during Ramazan, as it was before. However, those people who happened to try at least once a real delicacy of writing during a trip to this country will probably not forget just indescribable taste sensations.

Currently, writing is produced in many Turkish cities, while it is not difficult to purchase this sweetness at grocery markets or in any Istanbul supermarket. But it is considered strange that it is Izmite writing that is distinguished by a special taste.
