A constantly popular type of baking in France is the cake basket, which, by the way, is beloved by us since childhood. After all, that's when we begged our mothers to buy us "well, another" cake, right?

By the way, the secret of the popularity of this treat is simple: a sandy crumbly base, a little seen and a crisp white fluffy cream with a slice of marmalade. Almost the perfect combination for any sweet tooth. The cake basket simply beckons for its appearance, not to mention its incomparable taste and divine aroma. But you should not abuse it, since the calorie content of the cake basket is quite high.

The technology of making a cake basket for someone may seem quite complicated and time-consuming, but if you understand the cooking process in detail, it becomes clear that even an inexperienced cook can cope with this. The essence of making a cake basket lies in several stages.

To begin with, shortbread is made, which is baked in tin corrugated molds. It is pre-rolled (quite thinly - up to a centimeter) and mugs are cut out with a notch. After that, each circle is placed in a mold and tightly compacted. You need to bake the base for a short time at a high temperature - 10-15 minutes.

While the sand base is being prepared, the stage of making the cream begins. Traditionally, a protein variant is used, but many like the taste and texture of custard, butter or marshmallow creams. Basically, protein cream is prepared in a hot way, that is, hot sugar syrup is introduced into already whipped proteins, which not only makes the finished product sweet, but also disinfects it. Therefore, custard protein cream in cake baskets can be safely given to children.

After all the components are prepared, the most interesting thing begins - the assembly of ready-made cake baskets. Any sweet filler to taste is placed in the cooled sand base. It can be seen, jam, jelly, marmalade, candied fruit, nuts - the main thing is that the ingredient used is of a dense consistency and does not spread. The next layer will undoubtedly be an air cream, which is recommended to decorate, squeezing in a spiral, using a pastry bag with special attachments - a round or an asterisk.

And when finished, the finished cake basket is decorated with all kinds of sweet treats. Most often these are pieces of marmalade, cocktail cherries, chocolate or coconut chips, nuts. A fragrant note of confectionery is given to fresh berries and pieces of fruit, which also add aesthetics to sweet creation.
