So what is the "chip" of pasta cookies and why is it so popular not only in its homeland, but also in many other countries of the world?

In general, pasta is round in shape, delicate and at the same time crispy meringue cookies, which are small in size (up to five centimeters in diameter). This treat is based on white almond flour. By the way, confusion may arise in this matter, since there is also almost a culinary creation of the same name - macaroon. However, this is not a cookie or a cake, but a dessert that is made from coconut chips. This delicious dish is more famous in America, but it's not as legendary, light and sophisticated as French pasta cookies.

Pasta cookies appeared back in the Middle Ages in Italy, after which they reached France during the Renaissance. It was very popular at court, but not only kings and queens could feast on it. The fact is that then the pasta cookies were not the same as today - in fact, they were ordinary almond cookies.

It was at the beginning of the 20th century that Pierre Defontan - the grandson of the founder of Ladure's House Louis Ernest Lyadure - came up with a way to glue two cookies together with the help of filling. So a new kind of pasta cookie was invented, which is now called Gerbet or Parisian pasta.

Every morning, the Parisian confectioners of the Ladure'e House on Rue Royale carefully weigh almond powder, eggs and sugar in order to please the French and guests of the capital with an exquisite delicacy. By the way, Ladure'e House even has a special beautiful tradition: every year confectioners come up with a new aroma of pasta cookies, while replenishing the color palette. Despite the high price of this product, many connoisseurs argue that it is worth it.

There are a great many flavors of pasta cookies and their all kinds of combinations, so anyone can choose this sweetness for their taste.
