Kurabye cookies are considered as mysterious and magical as the country where this unusually delicious treat comes from. From him it flows with the original spirit of the East, where Scheherazade pleased the magnificent sultan with her tales.

The invention of the first kurabye cookie is disputed by Turkey, Greece, Iran and Syria. At the same time, according to one of the legends, the sweetness was accidentally invented by the resourceful servant of the Persian Sultan.

Once unkind people stole food from the palace, on the basis of which traditional eastern sweet dishes were prepared. Then the young man simply used wheat flour, sugar, eggs and butter. In addition, he trimmed the taste of kurabye cookies with notes of saffron, and the appearance with a thin layer of icing sugar. In this way, this magnificent crumbly cookie appeared - a simple, but at the same time became unimaginably common and beloved, oriental sweetness.

By the 17th century, kurabye cookies were also on the territory of European countries, but exclusively noble and wealthy people could allow them to buy it, since the sweets of the East were valued at the weight of gold. In addition, this sweetness was equated with the most refined delicatessen dishes and was considered a sign of subtle taste.

Today, kurabye cookies have their own local name for each people of the countries of the East: they can be called Baku or Persian. In addition, there are some types of kurabye cookies: Smyrna, Southern, Sursky and many others. However, invariably, the calorie content of kurabye cookies is quite high, so they need to feast within reasonable limits.

By the way, Greeks and Cypriots attribute this wonderful cookie to their national Christmas treats. There it is prepared in the form of balls densely sprinkled with snow-white sugar powder. As snow slides, sweet balls of curabier biscuits are stacked on dishes and then displayed on windowsills.
