Kozinaki is a national sweet dish of Georgian cuisine, which has long gained love and popularity not only in its homeland, but also far beyond its borders. Kozinaki belong to the ancient species of oriental sweets. Until now, in the eastern states, a sweet nut treat is prepared according to ancient recipes. Kozinaki is considered a mandatory dessert at the New Year's Georgian feast.

Composition of kozinak

In the classic composition of kozinak, there are only two main ingredients - honey and walnuts. Much later, sweetness began to be produced with added sugar. Over the long history, the production process of kozinak has practically not changed. Honey included in kozinak composition is melted till formation of thick sweet mass and pre-fried and finely chopped walnuts are added. The result is a honey-nut mass, which is cut into diamonds, called kozinaki.

Currently, kozinaki are produced not only using walnuts. Modern kozinaki is a confection based on sugar syrup and sunflower seeds, sesame seeds or a mixture thereof. There is a product based on forest and pine nuts, as well as kozinaki with pistachios, dried fruits, chocolate. The calorie content of kozinak is at a fairly high level and is 530 Kcal in 100 grams of sweetness. However, this indicator corresponds to the calorie content of kozinak, which are produced in a composition with sugar syrup.

Harm to Kozinak

Nowadays, more and more talk about the harm of kozinak to the health of the human body. Although a few decades ago, the benefits of kozinak were on the face. A product based on natural and beneficial components (honey and nuts) could not harm human health. Modern kozinaks are able to quickly contribute to an increase in a couple of extra kilograms, as well as problems with teeth.

Therefore, the product is not recommended to be consumed in large quantities. It is better to acquire a dietary form of kozinak based on fructose and oats. You can make sweetness at home. In order to cook kozinaki at home, you will need half a kilogram of honey and kernels of peeled walnuts. For even more sweetness of the final product, no more than 2 teaspoons of sugar can be added. Nuts need to be finely chopped and fried on a small amount of oil. Pour the honey into a saucepan and put on a medium heat. You need to bring the sweet mass to the boil, stirring honey constantly.

After the honey has boiled, you need to cool the mass and do all the same actions 2 more times. The result is a thick syrup, in which you need to add fried nuts and constantly stirring to bring the honey to a boil. At the last stage nut mass is laid out on board wetted with water and rolled out with rolling pin. A still warm honey layer is cut into even pieces. Useful home kozinaki are ready.
