Round shape, crisp and at the same time delicate amaretti cookies can be called a kind of meringue, since it is based on whipped egg whites. In addition, its small size is considered a distinctive feature of this confectionery - on average, amaretti barely exceeds five centimeters in diameter.

It is customary to cook this tasteful delicacy based on almond flour with the addition of some other components. By the way, amaretti is considered a component of the famous French cookie-pasty pasta. True, unlike amaretti, pasta consists of two halves of almond meringue, which are washed with filling.

Amaretti cookies appeared during the Middle Ages in Italy, and then in the Renaissance it became known in French cuisine. It enjoyed extraordinary popularity at court, but not only kings with queens could afford this sweet, light baking. And in fact, amaretti is just ordinary almond cookies.

By the way, returning to pasta, it is worth noting that this cookie cake was invented at the beginning of the 20th century by the grandson of Louis Ernest Lyadure (founder of the Ladure'e House). It was he who guessed to glue two almond cookies, which is amaretti, to each other with a filling.

Today, you can buy almost weightless amaretti cookies in confectionery stores at an affordable price, but many culinary experts prefer homemade baking to the industrial version. To make airy and very appetising amaretti cookies at home, you do not need a huge set of products and special skills in the pastry business.

So, the composition of the classic amaretti cookies includes almond flour, egg whites and sugar. In addition, lemon zest and natural essence of bitter almonds are often added to it, which serve as additional flavors. When whipping proteins, lemon juice is also often added to fix them.

Amaretti can be made using already finished almond flour or made on its own, for which in a dry hot pan fry the almond kernels until golden, and then grind them into grinders until they are powder, which must be mixed with lemon zest and sugar.

In the next step of making amaretti cookies, the squirrels are whipped into a lush foam, which gradually adds lemon juice and almond essence. In conclusion, the protein mass is combined with almond, small balls are formed, which are laid out on an oiled baking sheet and baked in the oven at medium temperature.
