This mushroom bears just such a name because it grows exclusively in places where there are birches. There are about ten species of podberezovik, and among the people it is called in different ways: dog, grandmother, common birch, gray mushroom, black-headed, black.

Podberozovik - a close relative of the white mushroom - can be found throughout Europe, the Caucasus, Central Asia and even the Arctic from the very beginning of summer until late autumn. The color of the hat of this mushroom varies from light gray to almost black. The pulp of the podberezovik is white, which does not change color when breaking, has a pleasant mushroom taste and aroma. However, with age, it quickly becomes a tinder and does not fit into food, losing all the beneficial properties of the podberezovka.

As for the calorie content of the podberezovka, it is small and amounts to 20 kcal. Many methods of preparing this mushroom are known and for this it is not at all necessary to pre-treat them. We advise you to use young mushrooms, or even better with other types of their counterparts, since the taste of the podberezovik themselves is poorly expressed. If you want to boil or dry them, remember that during heat treatment they darken very much, and therefore do not cook broths from bolesovik.

This forest treat can be used as a fragrant and delicious filling for rolls, pies, pizza and other pastries. And if you want a good base for making gravy and sauces, take dry mushrooms as a powder.

The benefits of podberezovik are already obvious in its composition: it is rich in full-fledged easily digestible proteins and a large amount of dietary fiber, which, in turn, work as a "vacuum cleaner, " absorbing everything unnecessary in the body.

In traditional medicine, it is recommended to use a podberezovik to treat the nervous system, renal pathologies and regulate blood sugar levels.
