Ivishen (podvishennik)

Ivishen (podvishennik)...

The yishen fungus, which is also called the pendant, belongs to the genus Klitopilus. Among its Russian synonyms there are such people as substrates, common cherry and lyclitopylus, while the species epithet prunulus means the phrase "small plum, " thereby referring to the whitish color of the hats of young willows.

According to the biological description, a willow tree (pendant) is a mushroom with a white hat of yellowish or slightly gray shade, with a diameter of 3 to 12 centimeters. Slightly pubescent, as the mushroom matures, matte and smooth, darkens when pressed. Young fruit bodies of the fungus are characterized by a hemisphere-shaped cap with folded edges, while with age it becomes flat-convex, completely flat or depressed (funnel-shaped).

The flesh of the willow (pendant) is dense and soft, also white (does not change at the fracture), but with a strong powdery smell. By the way, this characteristic smell of willow (pendant) has due to the presence in the tissues of trans-2-nonenal - unsaturated aldehyde. White or slightly yellowish plates in the fungus are narrow, very frequent, descending to the leg. The cylindrical leg of the calf (pendant) narrows to the base, sometimes it is curved. In the upper part it is covered with light powdery plaque.

Willow (pendant) grows on acidic, clay soil, and this fungus is most often found in light deciduous and broad-leaved forests, somewhat less often - conifers with an admixture of birch. In addition, the willow tree (pendant) can inhabit meadows, gardens and vegetable gardens, but there are always trees nearby. Usually this fungus forms mycorrhiza with rosaceae (cherries, plum, pear), from where its Russian name comes from. It begins to bear fruit in mid-July, disappears by the end of September.

In general, the entire genus Clitopilus includes a large number of species, most of which have much in common with the willow (pendant) with a difference in microscopic features. For example, this mushroom is very similar to the bitter seroplastic (inedible), characterized by the presence of concentric cracks on the hat and bitterness in the taste of the pulp.

Ivishen (pendant) is also similar to a number of species of poisonous white talkers (whitish talker and waxed talker). Their difference is in the hat - the first lacks watery concentric rings and pinkish plates.

The willow (pendant) belongs to the little-known edible mushrooms of the lowest fourth category. The food can be used fresh (after boiling for fifteen minutes), as well as pickled or dried. Yishen (pendant) is suitable for making sauces and side dishes for meat dishes. Moreover, after heat treatment, the characteristic powdery smell of the mushroom disappears.
