Wave mushrooms belong to the genus Mlechniki, which is associated with their feature, which is the isolation of white juice yellowing in the fresh air. Due to the caustic nature of this liquid, traditionally waves are used exclusively for salting (pink can be fried), and so that bitter mushrooms do not result, it is important to soak them first and boil them. Observing all the necessary salting steps produces a surprisingly delicious mushroom snack.

This attractive fungus is found in birch groves, as well as mixed forests. Interestingly, in some European countries this mushroom belongs to the category of inedible, while in Finland and here, on the contrary, it is very highly appreciated. Two types of waves stand out - white and pink, which differ not only in color, but also in the size of the hat (the pink wave has two more).

And in fact, the pink wave mushroom is most often distinguished by the pink color of the hat, but sometimes it can be white, grayish or light orange. The pink wave, like all milkweed, has a thick and rather searing white milky juice.

The white wave is somewhat smaller in diameter (four to eight centimeters) compared to pink. Her hat is distinguished by a dirty white color, in the central part a little darker than at the edges. White wave is used only for salting, since in other species it is not suitable for food.

Despite the fact that without mandatory pre-treatment, the mushroom is not used in cooking, subject to all the cooking recommendations, it is quite useful, due to its valuable physicochemical composition.

Composition of waves

Some vitamins were found in the composition of the waves, in particular groups B, A and C. That is why the useful properties of the waves are obvious for vision, as well as the state of hair and skin. The calorie content of the waves is about 22 feces per 100 grams of fresh mushrooms.

Benefits of waves

Various amino acids contained in the protein of this fungus cause the benefits of waves for human health, since they are well absorbed by the body. Due to this feature, the protein of the mushroom is sometimes compared with the protein of an animal.

Harms of waves

The likely harm of waves can affect people suffering from pancreatitis and cholecystitis, as well as in the case of reduced acidity of gastric juice. In addition, it is not advised to consume this mushroom for people who have undergone surgery to remove the gallbladder - such a product is poorly digested in their body, which can cause exacerbation of chronic digestive diseases.
