Caesar mushroom

Caesar mushroom...

Numerous tales of the taste of the Caesar mushroom have reached us since the distant times of the Roman Empire, when it was considered the best among all mushrooms. Great military leaders and even emperors spoke flatteringly of the Caesar mushroom in their records, and ancient poets sang it. Only a narrow circle of chosen ones allowed themselves to enjoy its taste, while the rest were content with less valuable mushrooms.

This fungus is also known as Caesar's muhomor. In appearance, the caesar mushroom is distinguished by a hat from a yellow-red or orange color, which is convex when young, and eventually becomes spread. The ribbed edge of the cap has a clearly visible surface. Orange or golden plates are characterized by a barely noticeable fringe, which is located closer to the hat.

On the leg of the caesar mushroom there is a pronounced monochromatic ring that expands to the base, and the color of the perfect does not differ from the cap. The light flesh of the mushroom is yellow in the hat, while smoothly turning into white to the leg. A distinctive feature of old mushrooms is that with age their flesh exudes a rather unpleasant smell like hydrogen sulfide.

The Caesar mushroom prefers a warm climate, and therefore it is problematic to meet it in mid-latitudes. In the northern regions of our country, it is not at all. On the territory of the former countries of the USSR, it grows in Georgia and Azerbaijan, the lucky ones were lucky to find it in the Carpathians and Crimean forests. Caesar fungus is attached to hard hardwood trees - its neighbors are beeches, chestnuts and oaks.

It is noteworthy that after prolonged precipitation, the caesar mushroom, especially at a young age, can be confused with a pale grebe or a red fly agaric. Their main difference is that the Caesar mushroom is not numerous and lacks scales on the skin of the hat. In addition, young fungi have a dense blanket and yellow cap flesh.

From ancient times to this day, Caesar mushroom belongs to the best delicacies. Mature mushrooms are baked on a grill or fried, they are suitable for drying. Very young fungi, which are still completely covered with unexploded volva, are usually used most often raw as part of savory salads. In general, the culinary methods of preparing caesar mushroom almost completely repeat the techniques provided for other types of plate mushrooms.
