The early winter variety of antonovka apples was bred as a result of folk breeding. Having become widespread in the middle of the 20th century, today it occupies a leading place in the assortment of apples in Belarus, Russia, the Volga region and Ukraine.

The distinctive property of Antonovka apples can be called their long shelf life (about 3 months), so the harvest harvested in mid-September can delight you with its aroma almost until the New Year. When peeling, the skin color of apples is greenish yellow, which changes to yellow during storage. The flesh of Antonovka apples is also yellowish, very sour-sweet and very juicy. By the way, the unique "Antonov" aroma and taste of apples gives a small excess of acid.

Thanks to the excellent gastronomic properties, antonovka apples can be eaten not only in fresh form - they are suitable for various processing methods. So, from these aromatic fruits, tasty compotes, juices, wine, jam, povidlo, pastille and marmalade are obtained. The special value of these fruits is known for lovers of urinated apples, since it is this variety that is suitable for this type of culinary processing. However, at the moment this method of blends is very rarely used by culinary experts, although it will not be difficult to prepare them. Urinated antonovka apples can be consumed as an independent dish, as well as as an additive to soups, various snacks and salads.

Quite interestingly, these aromatic fruits are quite often used when sauerkraut, to give it a more savoury taste. In addition, antonovka apples are stuffed with duck for a festive table, kvass is made based on them, and also added as a filling to aromatic pastries.

Despite the fact that Antonovka apples differ little in calorie content from other types of these fruits, due to their sour taste, they still have a number of advantages over other, sweeter, fruits. For example, antonovka is very appreciated as an ingredient in some salads - a fresh apple with sour can give the dish a special piquancy. But it is not recommended to cook compote from these apples, due to the fact that you need to add too much sugar.
