Berries are classified as extremely important foods, which are recommended to include people of all groups and ages in the daily diet. The fact is that the chemical composition of berries contains just a huge amount of vitamins and valuable natural compounds that can have a favorable effect on the human body. However, unfortunately, fresh berries are not always available year-round in our latitudes.

Nevertheless, on the shelves of modern grocery stores, even in winter cold, there is always a certain choice of fresh berries - grapes, plums, cherries and even strawberries. But the vast majority of such berries are imported from countries with warm climates, where crops are harvested more than once a year. Basically, such berries are processed using special food additives of artificial origin, which contribute to the preservation of the distinctive characteristics of perishable food during transportation.

Meanwhile, in order to preserve the unique beneficial properties of berries at home, the good old method is used - canning. According to the definition that is used in the food industry, conservation is understood to mean a method of harvesting food products, which provides for their technical treatment in order to inhibit the development of harmful microorganisms.

In general, several main methods of preserving products stand out, among which pickling, fermentation, salting, as well as canning stand out. In addition, preservation methods include drying, gelatinizing, drying, making jam, povidl, jams and syrups. As for canned berries, all of the above methods of preparation are suitable for their preparation.

It is worth noting that the method of preserving berries should be chosen based on the type of food whose distinctive consumer and taste characteristics must be preserved. Today, freezing is very popular, which is somewhat more profitable and not as time-consuming as the preservation process, which involves high-temperature processing. But some types of berries are still recommended to be canned, so to speak, in the old fashioned way.

When prepared correctly, canned berries are almost as tasty and healthy as their fresh counterparts. Undoubtedly, the chemical composition of canned berries differs from fresh ones, since during conservation, the initial natural raw materials are subjected to thermal treatment.

But in the winter season, canned berries play the role of not only an unusually tasty, but also a nutritious treat for the whole family. In addition, canned berries can be used as a filling for home confectionery and baking. Canned berries can be added as a component of curd desserts and fruit salads. And if you put canned berries for ice cream, you get an original and healthy refreshing dessert.
