In Georgia, Uzbekistan and Australia, it is customary to cook lamb with quince ("behili zharkop" - this is how such a dish is called in Uzbek). They really appreciate and love condensed juice from quince with pulp in the countries of Central Asia, where it is often called quince cheese. In addition, on the basis of evaporated juice from quince, a fragrant dessert is made - quince marmalade. By the way, there is an assumption that the word "marmalade" itself comes from the name of the quince in Portuguese - marmelo.

Real quality juice from quince is rare today, since only certain varieties of this healthy fruit, in particular its muscat varieties, are suitable for preparing an aromatic and tasty drink. The unusual juice from quince lies in the fact that mature fruits are not allowed into production immediately after removal - at first they are left to "ripen. " In the fruits thus aged, a real miracle occurs - their biological activity increases many times over.

Quince juice contains a large amount of vitamins (C, B, E and PP), there is provitamin A and carbohydrates. In addition, it contains potassium and sodium, malic, citric, tartronic and pectic acids.

In folk and official medicine, the healing properties of this aromatic drink are well known, which consist in its antiseptic, general strengthening, diuretic, hemostatic and astringent effects. It is recommended to use in the presence of vascular and heart diseases, malblood, asthma, diseases of the respiratory tract and gastrointestinal tract.

Quince juice is considered an excellent antiemetic, and it is also useful for intestinal inflammatory processes. It can be usefully enjoyed with poisoning, jaundice, depression, lack of appetite, high fever and diarrhea. In addition, natural juice from quince is indicated after suffering debilitating diseases.

Freshly squeezed juice from quince is remarkably combined with other juices based on fruit and vegetable crops, when consumed, their beneficial properties increase several times. For example, many people like pumpkin quince or apple quince juice. The insignificant calorie content in quince juice makes it possible to classify it as a dietary food.

However, quince juice has its own contraindications. First of all, it should not be drunk for constipation, pleurisy, as well as in the presence of allergic reactions. In addition, such a drink can harm the larynx and voice, and therefore it is not recommended to accept singers and teachers.
