Khvanchkar wine is produced as a result of fermentation of grape juice together with mezga in special Georgian jugs called quevri. It is worth noting that Hwanchkara wine receives its original taste, as well as its distinctive consumer qualities, thanks to the climatic conditions in the Racha region. Since the climate in the foothills of the Greater Caucasus is characterized by low night temperatures, Hwanchkar wine does not have time to ferment completely.

Therefore, the drink contains the so-called residual sugar, which has a direct effect on the taste, as well as the strength of the drink. It is noteworthy that only in 2012 the Georgian government was able to achieve recognition of the Khvanchkar trademark. In addition, a law was passed in Georgia stating that the Hwanchkar wine production zone is recognized as a national appellation.
