Port wine
According to international marketing law, port or fortified wine can only be called a drink that is produced exclusively in the valley of the Douro River in northeastern Portugal. In addition, it is made using a special technology.
It is customary for Port to drink at both the beginning and the conclusion of a meal. Like other high-fence grape wines (madera, sherry), this drink is perfectly combined with almost any dish: port with spicy and salty snacks, fried nuts, coffee, chocolate, candied fruit is good, and it is best suited to various types of cheese. Wonderful port allies - all desserts made on the basis of fruits and a variety of berries with bright tastes.
It is customary to serve this strong grape drink in special decanters or port glasses, which are tulip-shaped, since the thick sediment characteristic of this wine remains on the walls of the bottle. It is for this same reason that the port bottle should be prepared for supply, i. e. kept upright for several days. Connoisseurs and connoisseurs know that after opening the bottle, it cannot be blocked again - the cork is removed only once.

In general, there are two types of port depending on the way it matures - either in a bottle or in a barrel. The first category includes drinks such as Ruby, Branco, Late Bottled Vintage, Vintage, Crusted and Single Quinta Vintage. And the port, ripening in barrels, is called Tawny, Garrafeira and Colheita.
In our country, Ruby, Tawny and Branco (White) are ranked in the most popular types of port, which are in constant demand. Ruby's young whites and rosés recommend serving slightly chilled as an aperitif, in cocktails as well as light snacks. Other varieties of young grape wines, such as Tawny Reserve and Tawny, drink with ice.
With light dishes, poultry and fish, as well as mashed soups, pink and white ports are well combined. For some types of cheeses, any nuts and dried fruits, Tawny will be great. Even you can easily choose such a drink for cooked on fire or fried meat - the thick and pleasant taste of Late Bottled Vintage is best suited.
It's no secret that port is perfect with all sorts of desserts, especially chocolate and nut dishes, which profitably emphasize the taste and aroma of the aged drink. After a hearty meal, older aged vintage ports can be served as a digestif.
