Baked eel rolls

1. We will need boiled rice, rinse and cook it over a small fire for ten minutes. Turn off, and without opening the lid, let it cool a little.
2. Cut the eel fillet into a strip, about 1 cm wide.
3. Fry the sesame grains a little in a dry pan.
4. Mix the rice with vinegar, salt and add sugar, gently mix all the ingredients with a spatula.
5. Wrap the mat with cling film. We put the nori leaf with a shiny side down, and distribute a layer of rice on the matte side. Sprinkle with fried sesame seeds and spread a strip of smoked eel. We turn into a dense roll, using a rug. We cut the roll into 6 equal parts.
6. Put the rolls in a baking tin, sprinkle with grated cheese and bake in a hot oven for five minutes.
