Snack eclairs with filling

Eggs - 4 pcs., Water - 125 ml, Milk - 125 ml, Butter - 100 g, Salt - 0.5 tea liters, Wheat flour - 150 g, Eggs - 1 pc., Hard cheese - 75 g, Dill - 10 g, Mayonnaise - 2 table, Shrimp - 200 g, Cottage cheese - 150 g, Garlic - 1 tooth.
Prepare the necessary ingredients for the preparation of eclairs. Eggs should be at room temperature, non-small.
Cut the butter into pieces, put in a saucepan. Add water, milk, salt. Put on a moderate fire.
Heat the mass to a boil, stirring constantly so that the oil melts completely.
Pre-sift the flour. As soon as the liquid mixture boils, immediately pour in all the flour, while actively mixing the mass.
The mass should be uniform, move away from the walls of the pan. Heat the dough over low heat with stirring for 1-2 minutes to make the flour brew well. Remove the pan from the stove.
I immediately beat all the eggs and add them in portions to the dough. You can enter one egg at a time.
Let the dough cool to a slightly warm state. Add about 1/4 of the egg mixture (or 1 egg).
Knock the egg into the dough. Add the next egg only after the previous egg is fully connected to the dough. Thus, enter all the eggs.
The finished dough is viscous, smooth, uniform, slowly flowing off the shoulder blade.
On a baking sheet greased with a thin layer of vegetable oil, deposit eclairs at a distance of 2 cm from each other. I didn't have all the eclairs on the same sheet. In total, 35 eclairs turned out, I made them small.
Bake the eclairs in an oven preheated to 180 degrees for 30 minutes. During baking, it is better not to open the oven so that the eclairs do not settle due to the temperature drop. Ready-made eclairs to cool.
Prepare the ingredients for the fillings. I made 2 options.
For one filling, boil the egg hard, cool in cold water, peel, grate on a fine grater. Grind hard cheese similarly. Wash the dill, dry, finely chop.
Combine the components of the filling, add mayonnaise, mix.
For another filling, pre-thaw the shrimp, boil in boiling salted water. I have uncleaned king prawns, I cooked them for 7 minutes. Remove the shrimp, let cool.
Garlic, peel, wash, pass through the press or grate.
Peel shrimp, finely cut. You can grind the shrimp on a blender, then the filling will be pasty.
Combine shrimp, curd cheese, garlic, mix. I found the mass thick, I added a couple of spoons of cream.
Cut the eclairs on one side not to the end (or completely cut along) and fill with filling. I filled a little more than half of the eclairs with a given amount of filling. The snack is ready. Enjoy your meal!
