How to make a liver cake from beef liver for the holiday? Prepare the necessary ingredients. I used mayonnaise with a fat content of 67%. You can take mayonnaise in half with sour cream. Coat the liver with boiling water and remove the film from it. Cut the purified liver into large pieces.
Transfer the liver to a blender bowl and grind it to a porridge-like state. I molola for about 20 seconds at low speeds.
Transfer the liver mince to a deep bowl, drive in the eggs, pour in the milk and two tablespoons of vegetable oil, pour in the sifted flour, add the salt and pepper to taste.
Knead the homogeneous dough. Let it stand for 10-15 minutes and then stir again. The dough turns out to be liquid. This test was enough for me for 5 medium-sized pancakes.
Heat the pan with the vegetable oil (1 tbsp), place a fifth of the dough and flatten evenly to make a moderately thin pancake. Fry the pancake on one side over a medium heat for about 2 minutes.
Turn over the liver pancake and fry for another 1 minute. On the second side, it will fire faster. Remove the finished pancake from the pan and pour in the next batch. I did not pour oil anymore. I, as I already wrote, got 5 pancakes.
For the sauce, combine the crushed garlic and mayonnaise. I took mayonnaise at the rate of one tablespoon with a slide for one pancake.
You can start assembling the cake. Place the liver pancake on a flat dish or kitchen board and brush it with mayonnaise sauce.
Top with the next pancake.
