In order to get the mollusk from the shell without any problems, you need to put rapans in the freezer for a day. After that, we give the rapans the opportunity to thaw and arm themselves with a fork, we extract the meat. We cut the rapans in half and rinse them in water with lemon juice. This will help remove mucus and a specific smell. We easily beat off the meat and cook the batter, whisking the egg with black ground pepper. Pour the flour into a separate bowl. While it's cooking, the rapans can stand a little in the soy sauce. Five minutes will be enough for the desired effect. We roll the meat in flour, then lower it into an egg and quickly fry it in a pan. For each side, no more than ninety seconds. Put the finished dish on a plate, generously spray with lemon juice. Wine is perfect for rapans: pink or white dry. Enjoy your meal!
