Chicken parfait

Chicken liver - 500 gr, Onions - 1 pc., Garlic - 2 teeth, Olive oil - 2 tbsp., Butter - 500 gr., Thyme, thyme - 1 tsp., Brandy - 1 tbsp., Sea salt - to taste, Black ground pepper - to taste
Fry the crushed onions and garlic in olive oil.
Add chopped liver. Fry. Sprinkle with thyme. Fry until ruddy and pink in the middle. Set fire to brandy in a separate container so that all alcohol burns out. Add brandy to the liver. Fry for another 1 minute.
Transfer the liver to a blender. Grind.
Melt the butter. Strain the liquid through a sieve. Do not use white precipitate. Add oil, salt and pepper to the liver. Mix. Wipe the mass twice through a sieve.
Put the parfait in portion molds. Put in the fridge for an hour.
