Chicken breasts - 350 gr, Salt - 100 gr, Cognac - 50 ml, Ground red pepper - to taste, Ground black pepper - to taste, Kinza, coriander - 2 gr, Bay leaf - 2 pcs.
To make balyk from the breast, take chicken breasts, salt, cognac (you can vodka) and spices.
Rinse the chicken breasts well, remove the films, dry with a napkin.
Make a salt mixture from salt, cognac and spices.
Roll the breasts in the mixture, grate with it.
Cover and place the salted breasts on the lower shelf of the refrigerator for a day.
After time, rinse under cold water.
Pour water for 20-30 minutes to remove excess salt. Drain.
Wrap in gauze.
Drag with twine and hang on the balcony at cool times or simply put in the refrigerator on the lower shelf for a day or two.
Thinly chop the finished breasts and serve as a snack, make sandwiches.
