Add salt, sugar, vinegar to the pan of water and wait for the liquid to boil.
Cut the washed eggplant into 1. 5 cm side cubes.
Then pour the chopped aubergines into a boiling marinade, stir slightly, add the bay leaf and cook for 5 minutes. We throw the boiled eggplant into a colander and let all the liquid drain.
