Sift the wheat flour through a sieve, add baking powder to the flour, mix the dry ingredients and pour them into a bowl with the liquid mixture. Pour the flour not all at once, but add it in small portions, stirring the mass. You have to get a thick dough that will easily get together in a lump. Flour may need less or more, focus on the desired consistency of the dough.
Next, place the dough blank on a floured work surface and knead the elastic smooth dough. It is impossible to knead such dough for a long time, otherwise it can become firm and tasteless after baking. The main task is to assemble the dough into a pliable, dense ball. Wrap the dough in cling film and place it in the fridge for half an hour.
Grind the nuts to a coarse crumb. This can be done in a blender, grinder or using a regular rolling pin. Add the softened butter, sugar, a pinch of vanillin to the bowl with the chopped walnuts, if desired. Grind the ingredients with a spoon or clean hands until smooth in consistency, and the roll nut filling is ready.
Preheat the oven to 180 degrees. On the surface of the roll of arms, if desired, pattern with a fork and brush it with whipped egg yolk. Bake the roll for about 30 minutes.
