Grind 125 grams of freshly frozen cherries
Pour 240 grams of soft butter into a bowl and add 150 grams of sugar. Beat with a mixer for three minutes, gradually adding 4 eggs one at a time. And also from two eggs we separate the yolk from the protein, pour the yolks into the total mass, and put the proteins aside, we still need them!
Add 10 grams of baking powder and a pinch of salt to 270 grams of flour. Mix. Pour the flour into the liquid mass.
Cut the lemon into 2 parts and from one half of the lemon, squeeze the juice into the total mass, through a fine sieve. Mix with a mixer until homogeneous.
Add crushed cherries to the dough and mix until homogeneous.
We will bake a baking tray in which we grease with butter and pour dough. Send to the preheated oven to 180 degrees and bake for 35 minutes. We check readiness with a skewer or toothpick. The pie is ready! Let's do the icing.
In 100 grams of powdered sugar, squeeze out the other half of the lemon juice and mix until homogeneous.
Beat the remaining protein of two eggs until stable peaks. When the proteins rise, without stopping to beat, we gradually add a mixture of powdered sugar and lemon juice. The glaze is ready!
We apply glaze to the pie and decorate it as desired, I decorated with pomegranate grains. The pie is ready!
