The first step is to prepare gelatin. Pour cold water over it, stir and leave to stand for 25-30 minutes. During this time, it will swell well and absorb all the water.
How gelatin will be ready to deal with the main preparation. Pour the milk into a small ladle and bring it to a boil. Do not boil! Then put the broken white chocolate in the hot milk and stir to melt completely.
Put the swollen gelatin in a hot chocolate mass. From high temperature, the gelatin will begin to dissolve. Stir until completely dissolved. If the mass cools quickly, then it can be heated a little more. But do not boil!
It happens that several grains of gelatin do not dissolve. So that they do not fall into the finished mousse and spoil its homogeneity, pass the whole mass through the strainer. Then cool to room temperature.
Separately, whisk the oily cream with the icing sugar until fluffy. It is not necessary to beat to a strong, stable cream. Just to make the cream thicken and increase slightly in volume. At this point, any flavor syrup can be added to the whipped cream. Or you can not add.
Introduce the cream into the chocolate mass in small portions and stir by hand, using a whisk. Do not beat. Otherwise, the mass will become liquid.
Just mix both masses until smooth, lush.
Insert the sticks into the popsicle moulds. Place the mousse in a pastry bag and fill all the molds. Do not wait - the mousse freezes quickly. Put the molds in the freezer for 6-8 hours, until completely frozen.
For the chocolate glaze, break the dark chocolate into pieces and pour the vegetable oil into it. Microwave, stirring occasionally to make the chocolate melt completely. Why add vegetable oil? This is necessary for the flowability of the glaze. Cool the ready-made glaze to a little warm or to room temperature.
Frozen popsicles are easily removed from the mold. The chocolate glaze is convenient to pour into a tall glass. Dip the popsicle into the glaze and immediately pull out. On a frozen cake, the chocolate immediately freezes.
In this form, put the popsicle in the refrigerator for several hours so that they slowly thaw. It is not necessary to cover them so that condensate does not form.
