How to make pastry Sand baskets with fruit? Prepare the necessary ingredients to make the baskets themselves. Remove the butter from the refrigerator in advance so that it melts a little.
Chop the chocolate and cookies in a blender. If you want to make the chocolate taste more expressive, chop it with a knife into a larger crumb.
Add the soft butter and stir.
It should turn out a homogeneous wet crumb.
Spread the crumbs over the bottom and sides of the basket molds.
Put the baskets in the fridge.
Prepare the necessary ingredients to make the cream.
In a saucepan, combine the yolks, sugar, orange zest and juice.
Over low heat with constant stirring, bring the mixture to a thickening point and remove from the heat.
Leave the cream to cool a little and add the diced butter. Stir the cream until smooth.
Cover the saucepan with cream with cling film "in contact" (the cling film must contact the surface of the cream). This is necessary so that the crust does not form on the cream. Cool the cream completely.
Prepare the necessary ingredients to make the filling.
Wash the fruit and cut into small pieces.
Carefully remove the chilled baskets from the moulds and fill with the cooled cream.
Top with the pieces of fruit, pressing them slightly into the cream. Baskets are ready. Enjoy your meal!
