Chicken mince - 250 gr, Bacon - 50 gr, Chicken eggs - 1 pc., Soy sauce - 1 tbsp., Ginger - 10 g, Green onions - 6 gr, Parsley - 6 gr, Ground black pepper - to taste, Salt - to taste, Wheat flour - 300 g, Water - 90 ml, Sunflower oil - 1 tbsp, Potato starch - 1 tbsp.
How to make wontons? Prepare the products. Chicken mince can be used both ready-made and self-made. If you don't find fresh ginger, take it as a powder. Wash and dry the greens.
First, make the filling. How to make a filling? Finely chop the bacon, add it to the mince. Peel a small piece of ginger root (2x2cm), then grate it finely into the mince. Pepper, salt. Keep in mind that soy sauce will still be added, do not put a lot of salt.
Finely chop a few feathers of spring onion and parsley sprigs. Add to the mince. Pour in the soy sauce.
Separate the protein from the token. Add the protein to the minced meat, leave the yolk for the time being, it will come in handy later. Knead the minced meat well until smooth. The filling is ready.
Cook the dough. How to make dough? Boil the water. Sift the flour into a bowl. With constant stirring, pour boiling water into the flour, salt, add the oil. Knead the dough. Be prepared for the fact that flour may be needed more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough.
The dough is very elastic and soft, let it lie in a plastic bag for about 30 minutes.
Sprinkle starch over the board. Cut the dough on it into sausages, which then cut across. Roll out each piece very thinly into a round juicy. This dough allows you to roll out tortillas very thinly, literally to the point of transparency. On each juicy draw a circle with a yolk - as in the photo.
Put the filling in the center and connect the edges with a bag, leaving the top open - that's what the yolk was for, it will glue the dough together. This is how blanks for steam wontons are formed, if you are going to fry them, then glue the bags tightly.
Place the wontons on a sunflower oil-greased steamer grill and place over the boiling water. Cook the wontons for 15 minutes to steam. They can also be cooked in an electric steamer or slow cooker.
Serve the finished wontons immediately, hot, with soy sauce. Enjoy your meal!
