To make this dish, you will need a special clay pot in which you can cook on fire. Such utensils are common in both Asia and Europe. In Russia, finding a pot of heat-resistant clay is not so easy, but also possible. My friend brought me as a gift from a trip abroad. So, we are preparing frog legs:
1. First, the frog legs need to be marinated, for which you combine soy and oyster sauce, sugar, corn starch, sesame oil, black ground pepper and salt. Stir the legs with the marinade and leave to stand for 30 minutes.

2. Peel the onions, garlic, ginger, then cut the onions into small pieces, the ginger into plates, chop the garlic.

3. Heat the vegetable oil well in a pot, fry the legs in it until ruddy. Put them out of the pot, drain the oil, leaving about 2 tbsp. l.

4. Heat the oil again and add chilli (fresh and dried, whole), onions, garlic, ginger to it. Fry over high heat for 2-3 minutes.

5. Pour in the rice wine, oyster and soy sauce, balsamic vinegar, add the cornstarch. Stir everything and cook for a couple more minutes.

6. Pour in the water, pour in the Sichuan pepper, cook it all together for 3 minutes.

7. Put the fried frog legs in the resulting sauce, simmer them for 2 minutes.

8. Put the salt and sugar, pour in the sesame oil.

9. Add the spring onions, stir. Serve the dish hot. Enjoy your meal!
