How do I make a Whoopi Pai cake? Prepare all the necessary products according to the list. Remove the oil from the fridge beforehand and leave at room temperature. It should become soft and pliable.
Sift the flour, cocoa powder, soda and baking powder through a sieve. Mix the mass.
Send the softened oil to a deep container. Add the sugar and a pinch of salt. Whisk everything with a mixer.
Drive in one egg each, continuing to beat the mass with a mixer.
Gradually pour in the milk and continue to whisk.
In portions, start pouring cocoa flour into the butter mixture. Stir with a spatula or spoon until smooth. Keep in mind that flour can take you more or less, so focus on the consistency of the dough.
Pour in the hot water and stir again until smooth.
This is what finished dough looks like.
We'll need a few Whoopi Pai cakes for the cake set. To do this, send a small amount of dough to a cooking bag. Make 6 round blanks 4-5 cm in diameter. Send the tray to a preheated oven and bake at 180-200 degrees for about 10 minutes.
Check the baking readiness with a wooden toothpick.
Divide the rest of the dough into three equal parts. Cover the bottom of the mold (22 cm. ) With parchment paper. Lay out one part of the dough, flatten and send to a hot oven. Bake for about 20 minutes at 180 degrees. Determine the exact time and temperature of baking by your oven.
Check the bark readiness with a wooden skewer. Bake the remaining two parts of the dough in a similar way. Cool the cakes completely, cut the tops if necessary so that the surface is even. Be careful, the cakes are very tender and can crumble if you do not act carefully.
Prepare all the products you need for the cream.
Pour the chilled cream into a deep container, add sugar (optionally add 1 tsp vanilla sugar as well) and whisk until peaks appear (until traces of the whisk remain on the surface of the whipped cream).
Add sour cream and mix everything with a silicone spatula or spoon.
Make a soak of water and sugar. Place the first cake on a flat surface, soak in the sweet syrup. Send the cream to a culinary bag with a nozzle. Apply part of the cream in a circle, as in the photo.
Next, spread the cream over the surface of the cake in a spiral.
Place a second cake on top, soak in the syrup and brush with the cream similarly. Do the same with the last bark. Align the cream on the surface. Send the cake to the fridge for at least 4 hours (available overnight).
When assembling a cake, you can use a cooking bag without a nozzle, and an equally effective result is obtained. The top cake is allowed not to be smeared with cream, but immediately poured with chocolate glaze.
Make Whoopi Pai cakes, to do this, combine two (previously baked) circles with cream. Send to the fridge.
Make the icing for the cake. To do this, melt chocolate wedges and butter in a water bath. Stir to a single mass.
Pour in hot cream (you can heat them in the microwave). Remove from the stove and stir well until glazed.
Cool the glaze to room temperature, apply to the top of the cake and flatten.
Cut Whoopi Pai cakes into two in any order.
Garnish with the cake halves until the icing has frozen.
If desired, decorate with chocolate chips and other sweets.
Done! Can be served!
