How to make sour cream and honey cake? Prepare the products. First for cooking cakes. Take natural honey, better if it is liquid. If you only have candied and thick, then melt it in a water bath. Remove the butter from the refrigerator in advance, it should become soft.

Sprinkle the sifted flour in portions, kneading the dough with a spatula. Flour may need a little less or more, depending on its quality. The dough should be soft, it will remain a little sticky, and it should be.

We start rolling out honey cakes. Sprinkle the working surface with flour. Roll out the cake very thinly (about 3-4 mm thick). You don't need to equalize the bark right away, you will do it after baking. Transfer the cake using a rolling pin to a pan lubricated with vegetable oil.
Bake the cake in an oven heated to 170-180 degrees until ruddy. Be careful, the cakes bake very quickly (5-7 minutes). While one bark is baking, roll out the next one in the same way. Thus, the baking process is fast. Immediately cut the baked cake into a plate of the required diameter. Do this quickly, as honey cakes have the feature of hardening and become fragile. After trimming, place the cake on a flat surface. Stack the baked cakes one on top of the other.
Now let's make the cream. Prepare the ingredients for it. Choose sour cream to eat more. To make sour cream thick, weigh it in a linen napkin for the night. Excess fluid will drain from it and it will become much thicker. Instead of sugar, you can take powdered sugar, it will dissolve in the cream faster.
How to make cake cream? To make the cream, combine sour cream, sugar and vanilla sugar. Let the cream stand a little at room temperature so that the sugar dissolves. You do not need to beat such a cream, especially if the sour cream is thick after weighing.
It remains to collect the cake. Place the cake on a flat plate and brush generously with the cream. Top with the next cake. And so, blurring all the cakes, collect the whole cake.
Rinse the top and sides of the cake well, too.
Grind the bark trimmings using a rolling pin or blender. Sprinkle the top and sides of the cake with crumbs. Put the finished cake in the refrigerator for 7-8 hours. The best option is to leave the cake overnight, so it will soak well.
