First we will deal with the cream. We pour milk into the pan and add vanilla sugar to it. Put the pan on the heat and bring the milk to a boil.
While the milk is warming, combine starch and sugar in a bowl. Mix thoroughly.
Add yolks.
And we rub them with a whisk.
We pour hot milk into the yolk mixture in small portions. At the same time, constantly mix the mixture with a whisk.
We return the resulting mass to the saucepan and put it on medium fire.
Constantly stirring, bring the cream to thickening and boil. After the first signs of boiling appear on the surface of our cream, we boil it for another 1-2 minutes. Remove the pan with cream from the heat and leave it to cool. In order for the process to be quick, I put the pan in a container of cold water. During cooling, the cream is often mixed or covered with a film & quot; in contact & quot; with cream so that a crust does not form on top.
While the custard of the cream cools, we will deal with the puff dough. We roll the dough into a rectangle about 3-4 mm thick.
Cut the dough into strips about 1-2 cm wide.
Freely lay out strips of dough on a baking sheet and send them to the oven to bake.
Bake the sticks at 190-200 C for about 20 minutes until ruddy. We remove the sticks from the baking sheet and let them cool down completely.
In the meantime, let's go back to our cream. By this time he should have cooled down. Its temperature should be about 30-40 C. We add soft butter to the custard in small portions.
And we drive it into the cream. At the exit, we should get a very tender cream.
Cover the finished cream with film so that it contacts the surface of the cream and send it to the refrigerator for at least 30 minutes, and if time allows, then you can for a couple of hours.
Cut completely cooled sticks to one length. We put the trimmings and a couple of sticks aside - we will need them for sprinkling.
We cover the working surface with cling film. We put a layer of sticks on top of it.
Grease them with cooled cream. We do not regret cream: )
Put some of the sticks on top again And grease them again with cream.
And thus we collect cake from all sticks.
Helping ourselves with a cling film, we roll the sticks into a dense roll.
We send our cake to the refrigerator for soaking for at least 4-5 hours, or better all night.
When the cake is soaked and cooled, we take it out of the refrigerator and release it from the film. We shift it to a dish.
We grind the deposited trimmings and a couple of sticks into crumbs with our hands and sprinkle cake on all sides with it.
