Pavlov's meringue cake with whipped cream and berries

Prepare the necessary products.

Very carefully separate proteins from yolks. Pour proteins into a bowl, you can add a pinch of salt and beat first until a light air mass is obtained.

Gradually, in 2-3 steps, add sugar to the proteins and whisk until stable peaks and complete dissolution of the sugar. When stable peaks are reached, pour lemon juice. Add cornstarch and cinnamon, mix.

The resulting protein mass is divided into approximately two equal parts. Put half of the protein mass on the parchment and level to make a circle with a diameter of 20 cm. Carefully make a smooth surface.

Also lay out the second half of the protein mass, but arrange in the form of small peaks.

Send the whipped proteins for drying to an oven preheated to 150 degrees for 1 hour.

After drying, allow the cakes to cool completely.

While the cakes cool, make the cream. Pour the cooled fatty cream into a cold container and beat to a creamy consistency.

Separate the cooled cakes from the parchment. Put some of the whipped cream on a flat cake, add a little berries.

Top with bark with peaks.

Put the whipped cream and berries on them in the middle of the upper cake. Sprinkle the berries with icing sugar.
