1. Let's prepare a biscuit: - separate the proteins from the yolks, beat the proteins with half the sugar to strong peaks, and the yolks with the remaining sugar finished; - very carefully connect both masses together, sieve the flour with baking powder, knead the dough (we act very carefully, since the dough is airy and fluffy); - the bottom of the detachable mold (diameter 16-18 cm) is lined with parchment, the dough is poured into it, the surface is leveled; - send the tin to the oven and bake at a temperature of 180 degrees for 30-40 minutes; - we give the finished biscuit time to cool down, after which we remove it from the mold, pack it in cling film and leave it for a day.

2. We clean cherries from seeds and put them in a colander (you can on a sieve), fill them with sugar, put a bowl under the bottom to collect juice.

3. Put sour cream in a bowl, pour sugar and vanilla sugar, mix the components using a whisk. Let the cream stand for 20 minutes so that the sugar crystals are completely dissolved, after which we introduce freshly squeezed lemon juice and beat the mass with a mixer until thickened.

4. We collect the cake: we cut the biscuit into three cakes, two of which are soaked in cherry juice (by letting the berries in), lubricate with sour cream and sprinkle with cherries. Do not soak or lubricate the top cake, just cover it with a cake and send it to the refrigerator for an hour.

5. And now you need to make a cream to level the surface of the cake. We will use ganache. Melt white chocolate in a microwave (or in a water bath), add butter, wait for complete dissolution, stirring the mass with a whisk. Leave the ganache at room temperature for 10 minutes, then add a pink food dye and beat the ganache with a whisk.

6. We cover the chilled cake with cream, applying generously on the sides to level them to the maximum. Smooth the irregularities with a culinary spatula. We send the cake to the refrigerator for an hour, after which we cover it with the second finish layer, carefully leveling the surface of the cake (in an hour the remaining ganache will harden, so it needs to be flooded a little in the microwave). We return the masterpiece to the refrigerator for another hour. We decorate the finished cake with cartoon mastic heroes (you can buy ready-made ones) and toppers from it, merengues and marmalade.
