How to make a biscuit? Fold the eggs, yolks, sugar and salt into a refractory bowl. Place it on a pot of boiling water. Heat the mixture in a water bath to 40 degrees, stirring intensively with a whisk. Determine the temperature by touch - it should become noticeably warm. Warmed eggs will be better kept in shape, and the biscuit will be lush even without baking powder. Pour them into a larger container and whisk for 10 minutes until fluffy, white, smooth foam.
Sift the flour and cocoa and combine in a separate bowl. Next, in three stages, add the cocoa flour to the egg mass, gently mixing it with a spatula.

Send proteins with sugar and vanilla to a water bath and bring to 70 degrees. This will allow pasteurization of proteins, and they will be magnificent in keeping a lush shape and not falling off. Cut the cooled biscuit into two cakes, then cut the shape of the hedgehog from each. In the upper core, cut out the hole. Grind the biscuit trimmings in a blender. We need this crumb for the back.
Soak the biscuit with the cooled syrup, layer with cream 1. Put cookies in the hole in the form of mushrooms, berries, you can add nuts and dried fruits. In general, fill the hedgehog to your liking.
Combine the biscuit crumbs with cream 1 to make a cake-like mass of potatoes. Leave a little of this mass on the ears, tail and front legs. Form a back, connecting the edges well with the corjas. Stir the oil lightly to speed up the process. Once the oil pieces have completely dissolved, remove the container from the stove.
