Tiramisu with cottage cheese

How to make tiramisu with cottage cheese? Prepare the products. To soak cookies, cook strong coffee. Use alcohol if the dessert is for adults only. Instead of cognac, rum or fragrant liquor are also suitable.
Add a cinnamon stick to the hot, strong coffee and leave to cool completely.
Pour a teaspoon of cognac into the cooled coffee.
Next, make the cream. Prepare the products for it. Take cottage cheese soft, not dry, with the least fat content (I had 1. 8%). It can be briquettes (like mine) or soft cottage cheese in tubes. Depending on which cottage cheese you take, the cream is more or less dense: with soft cottage cheese in the tubes, it will be more uniform, airy, without grains.
How to make a cream? Divide the eggs into squirrels and yolks. Place the refractory bowl on a pot of boiling water so that the bottom does not touch the water - it will be a water bath. Pour the yolks into a bowl and whisk them directly in a water bath with 30 grams of icing sugar until pale yellow.
Pour the remaining cognac into the yolk mass and whisk it until smooth for another 2 minutes. Remove the cream from the water bath and whisk for a further 5 minutes until thickened.
Lightly whisk the curd with a mixer.
Insert into it in yolk cream, mix until smooth.
Separately, beat the proteins with salt with a mixer at a low speed, then increase the whipping speed and add the remaining icing sugar in parts. Beat the squirrels to steady peaks.
Gently inject the whipped whites into the curd cream (a spoon at a time) and mix until smooth.
Grate the chocolate on a fine grater. To make this more convenient to do, pre-hold the chocolate in the freezer a little.
Dip savoyardi in coffee with cognac and lay on the bottom of the creamanques.
Spread the curd cream on top, level.
Sprinkle the cream with grated chocolate. Repeat the layers depending on the height of the cremans. Refrigerate the dessert for 2-3 hours to soak. Garnish the finished dessert with mint and grated orange zest (it fits this dessert perfectly). Serve to the table. Enjoy your meal!
