Egg yolks - 3 pcs., Sugar - 70 gr, Dessert wine - 2 tbsp., Mascarpone - 250 gr., Fat cream - 360 gr., Water - 0.5 pack., Green tea - 1.5 tbsp., Savoyardi cookies - 200 gr., Green tea - 2 tbsp.
How to make tiramisu with tea match? Prepare the products. Remove the eggs and cheese from the refrigerator in advance, they should become warm. But cream, on the contrary, cool well, then they will get better.
Prepare a bowl of cold water before cooking. Put ice in the water, in it we will put a bowl with heated yolks so that they cool quickly.
Take a refractory bowl, put yolks in it, pour in the wine. Add half the sugar norm. Whisk with a mixer, not for long, just to stir the products.
Place a pot of water on the stove at the same time. Bring the water to a boil. Place a bowl of yolks on top. Water should not be taken to the bottom of the bowl, measure its amount in advance. Continue to beat the yolks already in the steam bath. This is done in order to avoid infection with salmonellosis. Heat-treated eggs become safe. Beat until thickened, but do not overdo it, the yolks can cook into an omelette.
Once the mass is thick, immediately remove it from the hot saucepan and place in a bowl of cold water. The heating will stop and the yolks will not weld.
Add mascarpone to the cooled yolks.
Mix until smooth. I always stir cream cheese by hand.
In a separate dish, whisk the cream with the sugar residue until soft peaks.
Add the cheese mass to the cream, mix. Stir better with a shoulder blade or whisk so that the cream does not break.
Take half a cup of hot water. it should be around 80 degrees. Pour tea into it, mix well with a whisk. Pour the tea into a plate to cool it.
Let's start assembling dessert. I cooked it in serving glasses, but you can make one big tiramisu. Dip savoyardi sticks in tea. They are very tender, do not keep them in the liquid for a long time, they can soak. Lay them in one layer on the bottom of the mould. If you cook in portions, then break the sticks beforehand.
Put the cream in the second layer.
Alternate cookies and cream, fill the entire form or glasses.
Put the dessert in the fridge for at least 4 hours.
Sprinkle the well-chilled tiramisu over the top with tea through a strainer. Garnish with berries when serving.
