Anna pavlova's simple cream cake

Chicken eggs - 3 pcs., Sugar - 180 gr, Wine vinegar white - 1 tea liter, Corn starch - 1 tea liter, Fat cream - 300 gr, Powdered sugar - 2 tbsp, Strawberry - 3 pcs., Kiwi - 1 pc.
Necessary ingredients. It is advisable to use fine crystalline sugar, so it is better soluble. If you do not have cornstarch, boldly replace with potato, the result is no worse. Take cream with a fat content of at least 33%.
Let's start by separating the yolks from the proteins. Be careful, not a single drop of yolk should get into the squirrels. We pour proteins into clean dry dishes.
Beat the proteins to soft peaks and add 1/3 part of the granulated sugar. Next, add the granulated sugar in about equal parts for 3-4 times. It is very important to beat the proteins for 2-3 minutes after each addition of sugar. If this is not done, then the meringue will turn out to be fragile and break under the weight of the filling.
After all the sugar is injected, we introduce wine vinegar and starch. Also beat 2-3 minutes after the introduction of each ingredient. If desired, you can add vanillin to the meringue. Beat the squirrels to steady peaks.
On a sheet of parchment, we draw a circle with a diameter of 20-23 cm. I draw a plate. Turn the sheet down with a pattern, and lay a baking sheet. So that the parchment does not twist, I stick it on droplets of whipped protein.
Spoon meringue on a baking sheet in a drawn circle. Then in the middle we make a small recess for cream and filling, distributing the protein with a spoon around the edges of the bark. Bake at 130 degrees for an hour.
Pour chilled cream into clean glassware.
Beat until thick, add powdered sugar, and continue to beat. As in proteins, vanillin can be added if desired. If the cream does not beat well, you can add a little citric acid (a pinch) or a few drops of lemon juice. Put the whipped cream in the refrigerator.
Cut kiwi and strawberries into wedges, dry on a paper towel. Use your favorite soft fruits and berries - raspberries, passion fruit, papaya, mango, peaches. Canned fruit can be used during the winter season.
We take the finished bark out of the oven and let it cool. Put whipped cream in the middle of the cake and decorate with fruits. If desired, you can sprinkle sugar powder on top. Cake must be refrigerated
