While the eggs are beating, pour milk into the pan, put on the stove. Add the butter and bring the milk to a boil. Wait for the oil to melt completely. Sift the flour into a separate bowl, add soda to it. Alternately add flour mixture and milk to the beaten eggs. Usually 2-3 approaches are enough. Gently stir (do not beat!) Everything into the dough by hand, using a whisk, so that the dough does not lose its pomp. Just gently stir in the cocoa.
Pour the finished dough into a baking tin (20cm) and place in the oven, warmed to 180 degrees, for 45-60 minutes. Navigate your oven. The finished biscuit will spring when pressed. Remove it from the oven and cool completely. Wrap in cling film and place in the fridge for a few hours to rest. Cut the sponge cake into 3 cakes before assembling the cake.
Soak biscuit cakes with syrup (you can use chocolate, sugar or just water), layer with cream and collect the cake. Brush the top and sides of the cake with cream as well and try to line it up as best you can. It is necessary that the finished cake under chocolate glaze looks smooth. Put the collected cake in the refrigerator for a few hours.
For the chocolate glaze, break the chocolate into pieces, pour over the cream and place to bask. Stirring constantly, melt the chocolate and bring the mass to uniformity. Remove the mass and add the butter to it. Stir to melt. If the glaze is thick, then at this stage you can add a little cream. Cool the finished glaze to room temperature.
Before pouring chocolate over the cake, put it in the freezer for an hour. Then pour chocolate glaze over the cake. Let the excess chocolate drain. Sprinkle the bottom of the cake with grated chocolate and place on a prepared surface. Whether it's a plate or a cake substrate. Due to the fact that the cake was slightly frozen before pouring, it is convenient to work with it and take it on hand. Garnish the finished cake to your liking with seasonal berries or fruit.
