How do you make Dakuaz coconut biscuit with berries? First, prepare the right ingredients for the biscuit. You can make almond flour yourself by drying the nuts in a dry pan or in the oven, and then tar them in a grinder. Wash the eggs and dry with napkins. Remove them from the fridge just before whipping.
Before kneading the dough, take baking paper and draw circles 16-17cm in diameter on it. This volume of dough will make three cakes, so draw three circles of the same diameter. You can cut extra paper, retreating from the edge of the circles 4-5 cm. And you can leave the paper as it is, the main thing is that it fits on the baking sheet.
Do the dough preparation. To do this, carefully separate the chilled egg whites from the yolks. We won't need the yolks for this recipe, so you can set them aside to use for other purposes: make homemade mayonnaise, custard, ice cream or anything to your taste. Pour the whites into a deep bowl and whisk with a mixer until fluffy.
Continuing to beat the whites, add fine sugar (35g) or powdered sugar to them.
Whisk the proteins until solid peaks and until the sugar dissolves completely.
Sift the icing sugar (90g) and almond flour into a separate bowl.
Add the coconut chips to the almond flour.
And mix everything thoroughly. By the way, if you have large enough coconut chips, you can grind it in a grinder to a state of small crumbs (I did so).
Add the previously mixed almond flour, coconut chips and icing sugar to the whipped egg whites.
And gently mix the dough with a spatula until completely uniform.
Place a round 10mm nozzle on the pastry bag and fill it with cream.
Starting from the center, settle 3 circles on the tray in the form of a twisted spiral.
Sprinkle the cakes on top with a little icing sugar and leave them for 5-7 minutes.
After 5-7 minutes, refill the cakes with the powder and let them stand for a further 5-7 minutes. During this time, turn on the oven to warm up to about 150 degrees.
Transfer the biscuit tray to the preheated oven and bake for 25-35 minutes. Corgi should be covered with a light golden crust. Focus on the features of your oven!
Let the biscuits cool slightly on the baking sheet, then transfer them to the grill and leave on it until completely cooled. Dakuaz coconut biscuit is ready and you can use it to make any dessert you want.
Alternatively, I suggest you make a very tasty and light summer cake out of these biscuits. For the cream, I take cream cheese or soft and tender cottage cheese (when choosing cottage cheese, be careful - it should not mustard or be with strong acid). Cream - fatty, from 33%. Berries - any. By the way, you can only take cream without adding cottage cheese or cheese to them. I like to combine them more.
Whisk the chilled fat cream with a blender until dense.
Whisk the cream cheese or curd with powdered sugar or fine sugar. By the way, if you use cottage cheese, then first wipe it through a sieve, then the cream will turn out to be more homogeneous.
Combine the cheese and cream masses, gently mixing them with a spatula. It should turn out a very light, moderately sweet cream (you can add sugars to your taste, but do not forget that the cakes are sweet in themselves, so do not overdo it so as not to make the cake cloying).
The cream is ready, the cakes have completely cooled - you can collect the cake. Transfer one cake to a flat dish, apply an even layer of cream on it (it is most convenient to do this using a pastry bag with a round nozzle). Place a second cake on top and apply the cream on top as well.
I advise you to slightly decorate the upper bark. To do this, retreating from the edge of the bark about 1 cm, put generous slides of cream in a circle. In the center, apply a layer of cream as shown in the photo.
Next, with the back of a teaspoon, make the depressions in the cream, heading from the edge to the center. Thus, we will have a kind of flower. In this form, transfer the cake for 30-40 minutes to the refrigerator. You can leave it there longer so that the cakes soak and the cream grabs well.
Before serving, garnish the cake with fresh berries and mint leaves.
