1. We prepare the nut mixture: combine the crushed nuts, which first need to be lightly fried in the oven, with sugar and flour.

2. Beat the proteins, gradually adding sugar.

3. When the protein mass is ready, add vanillin and nut mixture to it and mix, put in baking trays lined with parchment.

4. Bake the cakes for 20 minutes at a temperature of 170 degrees, reduce to 150 degrees and dry in the oven for another 1 hour 45 minutes. Now the cakes need to be allowed to stand for a day.

5. We make charlotte cream. Mix the egg with sugar well in the container, pour in the warmed milk and add more sugar. Mix well and pour the mass into the rest of the milk. Heat, bring to a boil. Do not stop interfering, keep on fire for 5 minutes, then cool down.

6. After the cream cools, put the soft oil and beat the mass with the addition of cognac and vanillin until fluffy. We divide the cream into two halves.

7. Add cocoa to one of the parts of the cream and mix.

8. Combine the cakes with white cream, and lubricate the top and sides with cocoa cream. We decorate the cake on top. "Kyiv cake" with walnuts is ready. Enjoy your meal!
