Rinse the chum steak well, peel off the scales, and drizzle dry with a tea towel.

Heat a dry non-stick frying pan or other well, lay down the chum steak and fry until the juice and marinade evaporate from below and the fish is toasted.
Turn the steak over to the other side, cover and reduce the heating of the cooker. Fry the fish until tender. Minutes 5 more. That's all! Serve the chum steak immediately hot with a side dish or fresh vegetables and herbs.
