How to make a kebab lula on skewers in a minced meat oven? Prepare all the necessary ingredients. If you buy ready-made minced meat, take high-quality without additives. But better, do it yourself. I used a lamb shoulder blade. Green onions can be replaced with bulb onions, but with a green taste more saturated. Greens can be used by anyone. I took parsley and dill.
You'll need skewers and a baking sheet to cook in the oven. Select a baking sheet in advance, checking that you can put skewers with minced meat on it (step 7). Take skewers at least 20 cm long. If they are very thin (2-3 mm in diameter), you can take several pieces for one kebab. So the meat will hold on harder. So that they do not burn when baked, fill them with cold water and leave them for about an hour.
Rinse the meat under running water, dry with paper towels. Extra water will ruin the consistency of the mince. If there are veins and films on the lamb, remove. Cut the meat into pieces with a knife so that it is convenient to twist on a meat grinder. Twist the meat in a meat grinder, passing through a nozzle with medium or small holes.
To make the mince more uniform, elastic and not fall apart when cooking, add mineral water to it and beat it off. To do this, transfer it to the work surface, lift it above the table by about 20 cm in your hands and throw it back with force. If the mince sticks, the surface can be moistened a little with water. It took me about 20 shots.
Remove the skewers from the water. Divide the mince into 6 parts and form a kebab lula. To do this, take the skewers and wrap the mince around them, tightly pressing it with your palm. Place the lula kebab on the baking sheet so that there is a distance between them. Bake on a middle shelf preheated to 200 degrees oven for about 15 minutes. Then turn the skewers over to the other side and leave even until ruddy. Determine the exact time and temperature by your oven.
